Sugarless Applesauce Cake

Sugarless Applesauce Cake


1 cup raisins
1 cup diced dried fruit
2 cups water
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
2 eggs, beaten (or can use egg substitute)
1 cup unsweetened applesauce
2 teaspoons liquid artificial sweetener
3/4 cup oil
1 teaspoon vanilla
1/2 cup chopped nuts
1 1/2 teaspoon cinnamon


Combine raisins, fruit and water in a saucepan.
Cook, uncovered, until water is evaporated and fruit is soft.
Set aside to cool.

Meanwhile, in a large mixing bowl, combine flour, baking soda, salt, nutmeg, and cinnamon.

In another bowl, combine eggs, applesauce, sweetener, oil and vanilla.
Add nuts and reserved fruit mixture.
Stir into dry ingredients and blend thoroughly.
Pour into a greased bundt for tube pan.

Bake at 350 degrees for 35-40 minutes.

Daddy used to like to make this cake. It’s very moist.
