Chocolate Fudge Cake with Icing


Chocolate Fudge Cake with Icing

2 cups flour
2/3 cup cocoa
1 1/4 teaspoon baking soda
1/4 teaspoon baking powder
1 2/3 cups sugar
4 eggs
1 teaspoon vanilla
1 cup mayo
1 1/3 cup water


     


Grease 2 cake pans.
Mix first four ingredients.
Set aside.

In large bowl, beat the next three ingredients for 3 minutes or until light and fluffy.
At low speed, beat in mayo.

Add flour mixture in four additions, alternately with water.
End with flour.

Pour into the pans.
Bake at 350 degrees for 30-35 minutes.

Icing:
In a small bowl, with mixer at medium speed, beat 6 tablespoons margarine.
Add 3/4 cup cocoa and 3 1/2 cups powdered sugar with 6-7 tablespoons milk and 1 teaspoon vanilla or almond flavoring.
Beat until of spreading consistency.

Ice middle, sides and top of cooled cake.
Makes 2 3/4 cups.
Add additional 1 tablespoon milk if needed to get to the right consistency.


Note:
Lisa B. made this for Lela for her birthday one year. We had such a fun visit. You can substitute almond flavoring for the vanilla extract in the cake for a little different taste.
